Truck Story

The story of Wallace and Sons

I bought it converted so I would love to know! It was a Burger/Hot Dog/Baked Potato Van when I bought it with horrible ebay bought signage all over it. I stripped out the Baked Potato oven and got Rob Draper to give it the De La Soul spray paint job which I love.

Make & Model

Renault Master

Specialty

Pan Asian treats, I've been a chef for 12 years and I suppose it was a reaction against all the butter rich food I created in that time. I love Asian food.

Ideal Customer

My ideal customer woud be someone who knows what a Bao is and appreciates the fact that we make them all ourselves!

Self Supporting

We don't use electricity and are completely gas powered so use a Berko boiler

Signature Dish

We make our own Gua Bao and our best seller would be the Katsu Chicken. So it is a brined piece of free range chicken thigh that we vac pack and cook at 72 degrees for 2 hours, its then chilled before being bread crumbed in Panko. We then fry that to order. Its topped with our own Pickled Shiitake Mushrooms and aerated Wasabi Mayo. Its the absolute bomb.
