The story of Baja Cantina
My truck was found in a scrap yard in Sweden - unfortunately I don't know it's full story. My truck is called 'Eddie' named after my step Dad who recently passed away.

Mexican. When I was at university in the US I would go down to Mexico on the Pacific coast. I fell in love with surfing (not very good!) and the food. For years I wanted to open up a taco shack and then the idea morphed into a food truck.
